I am impressed with the above posts. I really dont cook that much... usually eat fresh veggies and chicken/steak/fish for dinner. I'm super lazy. Probably why my fav gluten free food are the Omega smart bars (only in health food stores or by spcl order). They are super healthy (not junk like most GF products) and great on the go when I dont want to worry about packing lunch (I never eat out-glutened way too many times). website: http://www.omegasmartbar.com/. I like making "lazy lasagna" with Tinkyada rice pasta. I use the half a package of (cooked) shells and stir together some browned hamburger meat (small package of meat, or leave it out if you don't want it) with a couple of jars of Ragu spaghetti sauce (or maybe a little less, depending on what you want), a cup of cottage cheese, about two cups of mozzarella cheese, Stir all that together, put it in a casserole dish, Sprinke about 1/4 cup of Parmesan cheese on top, and bake til bubbly, 375 degrees for 20 minutes. Done! Just too easy. The recipe was originally from a Taste of Home magazine, but has been modified so much, I guess it's my own. I like all of the Tinkyada rice pastas. The taste and texture is really good. ... I like Bob's Red Mill All-Purpose Gluten-Free Flour. It's easy to use with good results, and I don't feel like a chemist mixing up my own flours. Sometimes, I can be just plain lazy!
My favorite GF food is probably my own recipe for pizza crust. It is something that I can make and my family can enjoy it too, without really noticing the difference. I made it for my mother and her boyfriend, and they seriously thought that I had made a regular crust and wondered why on earth I was eating gluten!
Aside from my crust, I also LOVE Glutino's pretzels. They are so "normal" tasting if you will haha. It is hard to find GF foods that remind you of the typical foods, though I am finding that I am starting to forget what those normal foods taste like anyway now that I am used to the GF way of living!
My recipe for the pizza crust, in case someone wants to try it is:
Jayson's GF Pizza Crust
Ingredients:
1 C Garfava Flour
1 C Tapioca Flour
2 T Millet Flour
1 C (minus 2T) Potato Starch Flour
1 C Hot Water
2 T Olive Oil or Canola Oil
1 T Garlic Powder
1 T Italian Seasoning
Salt and Pepper to Taste
Small amount of butter/margarine
1. Preheat Oven to 400 degrees F
2. Mix all flours, garlic powder, italian seasoning, salt and pepper in a large bowl.
3. Add 1 C Hot water to a mixing bowl
4. Add 1 C crust mix (flours and seasonings - see Step 2) and mix until well blended
5. Add 2 T Olive/Canola Oil and mix until well blended
6. Slowly begin adding the rest of the crust mix. You will go through a liquid stage, batter stage
and finally a dough stage. Dough should be firm, yet easily shaped.
7. Spead crust on pizza pan that is well greased or floured using rice flour.
8. Spray or coat with a small amount of butter/margarine & bake 7-10 Minutes to set.
9. Remove from oven and put half of your sauce on crust if desired. Return to oven for 10 minutes
10. Remove from oven and finish putting the rest of the sauce on the pizza, and include your toppings and cheese.
11. Return to oven and bake until cheese is golden brown or your desired doneness.
Jayson, I'm impressed by your pizza recipe. This is something I miss greatly, real pizza. I will have to try it on a weekend when I have the time and energy to play in the kitchen.
I just came across this recipe for brownies by Emeril on the planet green station. He did a show on "No Wheat, No Nuts? No Problem!" I plan to try it tonight and will let you know the outcome. It looks to be dairy free as well and does not have a million different ingredients to make up for the lack of gluten,
Yield: 24 brownies
Ingredients: Vegetable spray or Smart Balance for greasing pan 1 1/4 cups of applesause 1 cup of cocoa powder 1/4 teaspoon salt 2 cups sugar 1 mashed banana 2 teaspoons vanilla extract 1 1/3 cup brown rice flour 2 cups vegan chocolate chips or mixture of any vegan chips (I will probably use Nestle's here, not vegan)
Method: Preheat oven to 350 F. Grease an 8x8 pan using either vegetable spray or Smart Balance(butter substitute) In a large mixing bowl, combine all remaining ingredients. Pour mixture into prepared pan. Bake for 35 to 40 minutes or until a toothpick inserted in the middle of the pan comes out clean. These brownies are dense and fudgey.
Since I live alone, a regular homemade pizza is too much. I buy the Glutino Spinach & Feta pizza and add garnishes. Tonight I added garlic, sliced cherry tomatoes and parmagan cheese. Popped it in the toaster oven while I walked the dog. It was really good. I often add just garlic, mushrooms and low fat motzarella cheese. It gets the pizza fix in!
